Chicken stays tender when cooked quickly in a skillet. The sweet and tangy onion and orange sauce adds color, flavor and moisture. Cook rice and green beans in the microwave or on the stovetop while preparing the chicken. Enjoy with a garden salad and fresh fruit for dessert.

Chicken with Orange and Onion Sauce
Makes 4, 10-ounce servings
Prep time: 10 minutes
Cook time: 20 minutes

2 lb chicken thighs or drumsticks
Ground black pepper to taste
1 T GIANT canola oil
1 medium sweet onion, diced
1 cup GIANT orange juice
1 tsp GIANT soy sauce
1/8 tsp grated orange zest (optional)
1 T GIANT cornstarch dissolved in 2 T water
2 cups cooked GIANT rice

Remove skin from chicken pieces and sprinkle with ground black pepper to taste. Heat oil in a large skillet over medium heat. Cook chicken pieces until lightly browned, about 15 minutes, turning to brown evenly. Remove chicken from skillet and keep warm.

Add onion to skillet and cook until lightly browned. Combine orange juice, soy sauce and orange zest (if using) and add to onions. Cook, stirring, until mixture reaches a simmer, about 3 minutes. Add cornstarch mixture and stir just until it thickens. Serve chicken with rice and spoon some sauce over each.

Nutrition information per serving: 350 calories, 9 g fat, 2 g saturated fat, 105 mg cholesterol, 200 mg sodium, 37 g carbohydrate, 1 g fiber, 30 g protein.
