Moroccan Chicken Stew
Makes 4, 2 1/2-cup servings
Prep time: 15 minutes
Cook time: 1 hour
1 Tbsp. olive oil
1 large onion, diced
2 cloves garlic, crushed
1 lb boneless, skinless chicken breasts, cubed
4 large carrots, sliced
1 lb potatoes, cubed
1 red bell pepper, diced
1 cup peas
14.5 oz can diced tomatoes
1 1/2 tsp. paprika
1/4 cup fresh parsley or 2 Tbsp. dried
salt and pepper to taste
In a large pot, heat oil over medium heat and sauté onion and garlic. Add chicken, carrots, potatoes and 1 cup water. Cover and cook about 30 minutes, stirring occasionally. Add bell pepper, peas, tomatoes and paprika and additional water if necessary. Cook for another 20 minutes. Add parsley and continue to cook until potatoes and carrots are soft. Season with salt and pepper as needed.
